Fuego To-Go set to open in Rehoboth Beach

Fuego Food Truck has developed a following in New Castle County and its creative team is set to open a carry-out location in Rehoboth Beach, Fuego To-Go.

Rob Cruz and Phil Hollar say Fuego To-Go will open in March as a grab-and-go venture where, Cruz said, customers can “get what you want and roll.”

Cruz described the menu as fairly basic, Mexican-style tacos and quesadillas but with fusions of different styles such as Italian, Jamaican and Cuban. He said the restaurant will offer street food like that which would be found at a food truck.

“We are gonna be serving a large variety of tacos and rice bowls, from Korean beef to chicken, fish, and even pork belly,” Hollar said.

Hollar and Cruz teamed up in 2013, but without a restaurant space, they focused on Fuego Food Truck, which grew through catering and serving at bars that did not serve food. Hollar said they had been eying the beach for years but could never nail down a location.

Cruz has been working in the restaurant business in the Wilmington area since 2006, while Hollar started by running hot dog carts, ice cream trucks and water ice carts.

“Cooking has always been my passion. Ever since I was a kid, I liked to cook. I would watch my grandfather and was just amazed the way he made the food taste. I wanted to do that one day,” Hollar said.

Cruz said he grew up in Houston, where Mexican restaurants are everywhere and where experimentation with the traditional taco was the norm.

Cruz said when the opportunity arose to lease the former Otto’s Sandwich Shop on North First Street, the duo jumped at the chance.

At first, Cruz said, Fuego To-Go will be open on weekends but will start to be open seven days a week in March.
