Vegan author Lori Beinhauer to host cookbook launch at Good Earth Market in Rehoboth July 31

Lori Beinhauer, local vegan, home chef, plant-based consultant, and spokesperson and manager of Good Earth Market in Rehoboth, recently published a cookbook. Inspired and encouraged by friends and co-workers who wanted access to Beinhauer's recipes, she authored “Vegan Picnic, A Book of Simple and Familiar Recipes Made Vegan for Everyone.” Beinhauer will host a book launch and signing from 1 to 3 p.m., Sunday, July 31, at Good Earth Market in Rehoboth at 38131 Terrace Road. Food samples will be provided. 

“Vegan Picnic” was written to appeal to a wide variety of people, not just vegans or vegetarians. The author shows readers how they can have familiar foods, comfort foods and picnic foods in a plant-based form simply by using substitutes for the meat, dairy and eggs. Beinhauer makes it very easy for people to add meatless meals to their menu, or transition their diet, by providing simple recipes using ingredients found in any pantry along with a few substitutes which can be found in grocery stores and health food stores. 

Many locals already know Beinhauer and have tasted her food at one of the numerous presentations, cooking demos and meatless events she has hosted throughout the area. For those who were in attendance at Rehoboth VegFest 2015, yes, the chicken-free chicken salad recipe is included in the book, along with the other dishes she showcased at the festival. Some of the other recipes included are: meatloaf, sloppy joes and chili; mac-n-cheese and lasagna; Pennsylvania Dutch style macaroni salad, eggless egg salad and creamy coleslaw. Beinhauer even includes desserts from simple brownies to a decadent chocolate raspberry layer cake, all made without meat, dairy or eggs.

For those who are gluten-free, oil-free or soy-free, there are recipes in the book as well, and Beinhauer offers tips on how to change some of her recipes to suit their diet. More than a cookbook, the recipes in “Vegan Picnic” are interspersed with stories, information, knowledge, quotes to live by, and the author's philosophy about why it is so important to live a plant-based lifestyle. Meatless since 1988 and vegan for the past 20 years, Beinhauer combines her expertise and her passion to excite and inspire readers to eat meatless for animal welfare, human health and environmental sustainability.

The author will appear at future book signings at various locations including at the East Coast Garden Center in Millsboro Saturday, Sept. 10, and a craft fair at Good Earth Market in Clarksville Saturday, Sept. 17. To purchase “Vegan Picnic” online, go to www.CreateSpace.com and www.Amazon.com.
