Gypsy Soup & Climate Change

Back in the days when meatless meals were novelties, we enjoyed this wonderful Gypsy Soup from the NEW MOOSEWOOD COOKBOOK. Now that every meal for us is meatless, we really love this delicately spiced Spanish-style vegetable Soup and it always gets rave reviews from guests. 

So what does Gypsy Soup have to do with climate change? It’s meat free! According to the UN FAO report and WorldWatch Institute, animal agriculture is responsible for up to 51 percent of greenhouse gases. In addition, most chronic diseases and unspeakable animal cruelty are attributed to human consumption of animal products.
