Cabbage becomes sauerkraut
SUBMITTED PHOTO
As part of their scientific study of fermentation, fifth- and sixth-graders at The Jefferson School recently made sauerkraut. After soaking fresh cabbage in a 2.5 percent salt solution and placing it in a sealed container, they made observations over a 10-day period. Students tracked the progress of the sauerkraut, measuring production of carbon dioxide, pH levels and changes in the texture and appearance of the cabbage. Under microscopic observation, changes in the cabbage cells and the presence of fermenting bacteria in the salt solution were noted. The last step for these young scientists was to taste-test their creation with hot dogs and mustard. Shown are The Jefferson School students Clare Hancock, left, and Kate Bagshaw.
