Mark Betchkal of Rehoboth publishes ‘Pleasurable Table’ cookbook

After seven years of effort, Rehoboth Beach resident Mark Betchkal has published his first cookbook, “The Pleasurable Table: 100 French, Italian, and American Inspired Classics.”

The book includes a mix of recipes. Some are very quick and easy. Others require a bit of time. About a third of the recipes in the book are interpretations of classic recipes; they are re-engineered for today’s ingredients and techniques. The other recipes are Betchkal’s own, but he explains that they are drawn from French, Italian and American traditions. Betchkal said, “They are recipes that represent season and place.”

The book advocates how one should eat – with an unapologetic demand for quality and authenticity. It also advocates the pursuit of food as total immersion in pleasure. Food not as medicine. Food not as art. Food not as science. Food not as physical nourishment. Rather, food as the authentic expression of its ingredients and the techniques which transform it in pursuit of pure unmitigated pleasure.
