Plant-based eating is getting tremendous attention these days, with the market exploding over just the past five years. More and more, people are moving toward plant-based eating not only for their health, but for the environment, sustainability and preservation of natural resources.

The event will include a question-and-answer session about transitioning to a vegetarian or vegan diet, plus a demo on how to make one’s own sprouts in a jar.

Haransky-Beck has been a holistic vision practitioner specializing in natural vision improvement for more than 33 years. She works to facilitate positive change through her work as a vegan optometrist, EmbodyVision yogini, somatic movement therapist, veganic permaculturist, spiritual nutrition counselor and organizer of Vegan Spirituality-Southwest PA. Author of “Enlivening Consciousness,” Haransky-Beck founded the Schwartz Living Market in Pittsburgh, an early demonstration-project of living foods and living buildings. Her home in Monroeville, Pa., features a veganic permaculture landscape.

Kong speaks around the world as a vegan advocate and is the author of “If You’ve Ever Loved An Animal, Go Vegan.” She is featured in “Legends of Change,” about vegan women changing the world, and has been praised for her TEDx talk, “The Power of Plant-Based Eating,” and the video, “An Urgent Plea for Healing: Cherish All Animals.” Kong appears in a documentary narrated by Kate Winslet, “Eating Our Way to Extinction.” An award-winning classical pianist, she holds a doctor of musical arts degree from the University of Oregon and draws upon a diversity of skills as a writer, speaker and creative artist in her advocacy activities. Kong is currently a faculty member and sustainability advisor at the University of Richmond in Virginia.
