Ms. Francese's Letter to the Editor Feb. 23 advising the restaurateur who was feeling the downside of running his business was not completely intuitive or productive.
It was not about "you" and your dietary needs, but the difficulties restaurant entrepreneurs may experience.
To me he sounded like a man who needs customers to give him a chance. I would have liked to know the name of his restaurant so that I could do so. Gluten-free flour offerings are not going to help him get more patrons in the door - microbiome science and leaky gut syndrome notwithstanding.
I hope that things get better for him.
