NOT YOUR MOTHER’S MEATLOAF

MEATLOAF is a BIG DEAL in the news. Perhaps you've heard that it is one of Trump’s favorite foods. He raves about his mother’s recipe, very much like my own mother’s. Long before I became aware of the personal and environmental crisis created by our consumption of animal products, I, too, loved meatloaf. My mother taught me how to make a terrific loaf--a mixture of the finest ground beef, pork and veal, farm fresh eggs, lots of tender onions, celery and peppers, finely ground bread crumbs, topped with mother’s secret tomato glaze. It was literally, “to die for”!

Now a different loaf calls my name--EAT LOAF as found in THE PREVENT AND REVERSE HEART DISEASE COOKBOOK by Ann and Jane Esselstyn, BEANIE VEGGIE LOAF as found in THE PLANTPURE NATION COOKBOOK by Kim Campbell or CHEF LEO’S LOAF as found in his Rehoboth Beach Delaware Restaurant, LEO’S MODERN MIXTURE on the beach block on Rehoboth Avenue. All 3 are winners because they taste fabulous, are easy to make, promote human health and contain no animal products or added oil. Leo generously wrote out his great recipe for me after I tasted his delicious creation. We’ll be having it for dinner this evening in celebration of chefs and cooks everywhere who are showing us how to create a healthier, kinder and more gentle world.
