Star-Studded Lunch

Many thanks to Chef Wilson at the Buttery in Lewes, Delaware, for a truly splendid Plant-based lunch today. This was an annual holiday affair for our Yoga group, so spirits and expectations were high. But I know dining out as the lone Vegan in a group of Omnivores can sometimes be a challenge, so I had called ahead and even stopped by to make arrangements for a Vegan meal with no added oil. I was not disappointed. My creative Zucchini wrap, filled with a delicately seasoned mushroom, rice, cherry tomato, chard stuffing topped with a butternut purée and garnished with toasted pumpkin seeds was both beautiful and delicious! All my friends and I were quite impressed with Chef Wilson, his personal table-side consultation and his customized creation even during the height of lunch hour in his busiest season! A star-studded fruit melange was the perfect finish for this memorable occasion.
