Cape Seasonings Andouille Turkey

Ingredients:

  • 1/4 cup Extra Virgin Olive Oil
  • 1/4 cup flour
  • 1 TBS butter
  • 1 lb turkey (holiday leftovers work best)
  • 3 celery stalks, chopped
  • 1 medium red onion, chopped
  • 1 medium white onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1/2 stick (cooked) Andouille Sausage, chopped
  • 15 oz. chicken broth
  • 1 TBS Cape Seasonings Soul Blend
  • 1 cup cooked rice
  • Sea salt & pepper to taste

Directions:

  1. Make a Roux: in a large pot: heat oil and butter.
  2. Add Cape Seasonings Soul Blend
  3. Then slowly add flour, stir constantly, 5 min be careful – do not burn.
  4. Add Andouille, celery, onions & peppers: Cook 3 min.
  5. Add a dash of salt/pepper here if you wish.
  6. Add chicken broth, bring to boil.
  7. Reduce heat, simmer: 15 min.
  8. Add turkey, cook an additional 5 min.
  9. Serve on a bed/scoop of rice
