Cape Seasonings Andouille Turkey
Ingredients:
- 1/4 cup Extra Virgin Olive Oil
- 1/4 cup flour
- 1 TBS butter
- 1 lb turkey (holiday leftovers work best)
- 3 celery stalks, chopped
- 1 medium red onion, chopped
- 1 medium white onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1/2 stick (cooked) Andouille Sausage, chopped
- 15 oz. chicken broth
- 1 TBS Cape Seasonings Soul Blend
- 1 cup cooked rice
- Sea salt & pepper to taste
Directions:
- Make a Roux: in a large pot: heat oil and butter.
- Add Cape Seasonings Soul Blend
- Then slowly add flour, stir constantly, 5 min be careful – do not burn.
- Add Andouille, celery, onions & peppers: Cook 3 min.
- Add a dash of salt/pepper here if you wish.
- Add chicken broth, bring to boil.
- Reduce heat, simmer: 15 min.
- Add turkey, cook an additional 5 min.
- Serve on a bed/scoop of rice
