Gator Ron's BBQ Pulled Pork Egg Rolls

Egg Roll Ingredients:
- 10 Egg Roll Wrappers
- 2 Cups Pulled Pork
- 1/4 Cup Gator Ron’s Heavenly BBQ Sauce
- 2 Cups Coleslaw
- 4 Green Onions, Chopped
- Water
- Peanut Oil, For Frying
Spicy Peach Dipping Sauce Ingredients:
- 1/4 Cup Gator Ron’s Heavenly BBQ Sauce
- 1/4 Cup Peach Preserves
Directions:
- Mix the Gator Ron’s Heavenly BBQ Sauce and peach preserves.
- together in a small saucepan. Over medium heat, warm the mixture to blend flavors.
- Remove from heat and let cool.
- In a medium sized bowl, toss the pork with the Gator Ron’s Heavenly BBQ Sauce until the pork is well coated.
- Place an egg roll wrapper on a work surface with the triangle edge pointing towards you. Put a tenth of the pork on the lower third of the
- wrapper. Top the pork evenly with a tenth of the coleslaw. Sprinkle with the chopped green onions.
- Lightly brush the edges of the wrapper with the water.
- Fold the bottom portion of the wrapper over the filling. Fold both the edges inwards and roll the wrapper up completely. Press on the
- open flaps to firmly secure the rolls. Set the roll aside, seam side down. Repeat until all eggrolls have been prepared.
- In a heavy-bottomed pan, heat about 1/4” deep of peanut oil.
- Add the egg rolls, in batches, to the pan. Cook, flipping with tongs, until they are crisp and golden brown on all sides. Remove from pan and
- let drain on a paper towel-lined cookie sheet. Transfer the rolls to a serving platter and serve warm along with the spicy peach dipping sauce.
