The Counting House Restaurant and Pub cut the ribbon Feb. 13 on The Circle in Georgetown.
While The Counting House took over the restaurant from the Brick Hotel, the Lester family is still operating the hotel. The restaurant was remodeled and the kitchen has been fitted out with new equipment.
Owners Miguel Batiz and Bill Clifton also moved the restaurant entrance to a door on Market Street, but the bar is still entered by the front door on The Circle. Chef Bill Clifton is sourcing all of his food from Sussex County whenever possible, creating classic comfort food with a modern twist.

Manager Miguel Batiz and chef Bill Clifton pause, on their grand opening day, for a photo in the newly-outfitted kitchen.

A ribbon was cut in front of the Market Street entrance in a ceremony sponsored by the Georgetown Chamber of Commerce. Shown in back are (l-r) Don Kellicutt, Town Manager Gene Dvornick, Joe Conaway, Sunny Gyuani, Donna Koskey, Joann Conaway, Paul Steele, Sen. Brian Pettyjohn, R-Georgetown, Ken Cicerale, Jaime Lester Croce, Brooke Lester Darmstadter and Lee Darmstadter. In front are Lora Walinskas, Jennifer Antonelli, Georgetown Councilman Bob Holston, Mayor Bill West, Manager Miguel Batiz, Chef Bill Clifton, Georgetown Chamber President Anthony DelFranco, Barbara Steele, Sarah Gilmour, Georgetown Councilwoman Rebecca Johnson-Dennis, Laura Palmer, Bob Palmer and Joe Croce.
