Wicked Refreshing Watermelon Gazpacho from the Sarno brothers as seen on their wonderfully creative website WICKED HEALTHY (https://wickedhealthyfood.com/2017/09/01/wicked-refreshing-watermelon-gazpacho/) was the perfect taste treat for class #2 on Plant-Based Eating for Personal and Community Health. We mixed up a delicious broth of watermelon juice, lime juice, garlic and grated ginger and poured it over chopped colorful seasonal veggies. Cool soup for our hot topic—how to eat for personal and community wellbeing while avoiding the damaging impact of animal consumption on human, animal and environmental health.

Guiding us through the health risks of the Standard American Diet of meat and dairy was Pam Popper, Ph.D., N.D. In this interview on Diet and Disease. (https://youtu.be/QDZsg3hv77I) Naturopath and internationally recognized expert in nutrition and health, Dr. Popper is the Executive Director of The Wellness Forum. The company offers educational programs designed to assist individuals in changing their health outcomes through improved diet and lifestyle habits; to assist employers in reducing the costs of health insurance and medical care for employees; and to educate health care professionals about how to use diet and lifestyle for preventing, reversing, and stopping the progression of degenerative disease.
