Sushi Heaven brings edible art to Lewes
For those who love fish, why not find heaven on earth at the new Lewes-area restaurant Sushi Heaven?
Korean brothers Su-Kyun and Jay Shin have worked as sushi chefs for a combined 50 years. In Lancaster, Pa., Jay was voted the area's top sushi chef. Both have owned and operated several restaurants in Pennsylvania, North Carolina, Virginia and New Jersey.
Settling in Milford, the family has been looking for the perfect location for nearly seven years.
They found it in the former Barista Cafe off Route 1, just south of Five Points. Sushi Heaven opened last month.
The Shins made it a family affair by adding Su-Kyun's wife, Mee Hyung Lee in the kitchen and daughters Anastasia Ko and Alam Ko as waitresses.
"We started our careers in New York City where we learned about fusion style," Su-Kyun said. "We learned a large variety of sushi rolls, specialty dishes and sauces."
The brothers like to stay up on new styles of Asian cuisine and often visit with friends from California to find out what's new in sushi.
The menu at Sushi Heaven will have daily specials, and Jay said he will work with customers to design the perfect sushi roll.
"Many of our customers are asking for crunchy rolls, so we are doing more of those," Su-Kyun said. "We also do brown rice rolls, which are not always available at other restaurants."
Besides sushi, Su-Kyun also features kalhbi, or marinated Korean short ribs; spicy pork; and bi bim bab, a rice dish with mixed vegetables and a specialty sauce.
"It's very healthy, and people really like it," Su-Kyun said. "We often something for everyone, even the adventurous eaters."
Sushi Heaven serves lunch from 11:30 a.m. to 2:30 p.m. Dinner hours are 4:30 to 10 p.m. On Saturday the restaurant is open from 2:30 to 10 p.m. It is closed Tuesdays. During the week the restaurant closes from 2:30 to 4:30 p.m. to prepare for dinner.
