Eating “Upside down”

Once again, the aroma of spiced rice and vegetables fills our home. Monsieur Biebers is back in the kitchen making Maglouba, a national dish of Palestine. The name Maglouba means “upside down”, the perfect description for a dish that makes its dramatic entry before hungry diners as it slides gently from the upturned pot in which it has been simmering.

What a site to behold! And the taste is divine! Sweet potatoes, white potatoes, cauliflower, eggplant, carrots, peppers, tomatoes, tomato paste, garlic and onions simmer in water until tender with spiced jasmine rice. Monsieur Biebers shares his spice mix here so creative cooks can enjoy a traditional Palestinian dish.

2 T black pepper
2 T cumin
2 T paprika
1 T coriander
1 T cloves
1 tsp nutmeg
1 tsp cinnamon
1/2 tsp cardamom
