Glazed is not your poppop’s doughnuts

Owners of Mug & Spoon open new sweet and savory shop on Rehoboth Avenue

Aileen Hearn and Kyle Ten Eyck brought over-the-top tastes to milkshakes when they opened Mug & Spoon on Rehoboth Avenue three years ago. Now, the two have taken on another sweet treat – doughnuts – with Glazed.

“We have always wanted to expand on our offerings, but we needed a full-sized commercial kitchen, so we took advantage of the opportunity when this place opened up,” said Ten Eyck, standing in the kitchen of Glazed. “The more space we had, the better.”

Ten Eyck said the goal is to bring Mug & Spoon’s reputation for excess to Glazed, located on Rehoboth Avenue, about halfway between Mug & Spoon and the Boardwalk. Trendy, but delicious food, he said.

Nicole Viscount is the head baker and Hearn’s cousin. Glazed is her first baking job.

Hearn said Viscount had expressed interest in becoming a baker, so she hired her cousin. It allows her to be creative, said Hearn.

“It’s worked so far,” said Hearn, as she was dipping a portion of the morning’s doughnuts into the lime-green glaze for Glazed’s toasted coconut lime doughnut.

Viscount said she appreciates the opportunity to let her creative juices flow. 

“I’m learning something new every day,” said Viscount, using a long-stemmed lighter to toast marshmallows for the s'mores-flavored doughnuts. “I’m also learning that I like my doughnuts.”

Glazed features a selection of traditional donut flavors, but Viscount said the goal is to change up the menu offerings daily. She said the most unique flavor she’s created so far, with surprising results, is the buffalo chicken doughnut. It’s got a blue cheese glaze with a piece of buffalo chicken in the hole.

“I love blue cheese on everything. It’s really good,” said Viscount, who is self-taught and hopes to attend culinary school in the future.

Viscount said the doughnuts are yeast-raised, as opposed to a cake batter donut. It’s a little harder to prepare, because there’s a rising time, but they melt in a person’s mouth, she said.

For now, Viscount makes 150 donuts daily, but she said that will change once summer picks up. Those are going to be some early days, she said, laughing and shaking her head thinking about arriving to work at a time of the morning when some people are going to bed.

In addition to doughnuts, the menu also offers some savory treats like hot dogs, beach fries and a waffle cone stuffed with fried chicken. Stuff that can be eaten while walking on the Boardwalk, said Ten Eyck, adding the menu will soon feature thin-pattied fast food cheeseburgers.

“I’m really excited,” said Ten Eyck, pulling up a picture-perfect burger with four patties, melted cheese and toppings from his phone.

Glazed, 8 Rehoboth Ave., is open 11 a.m. to 8 p.m., Thursday through Monday. Hearn said the plan is to be open seven days a week soon. For more information, go to bestfoodrehoboth.com or call 302-278-7175.
