What a treat to have visiting chefs, Michele and Robb, make one of their favorite dinners for us this Labor Day weekend! The aroma of roasting onion and peppers mingled with adobo, black beans, garlic and tomatoes and filled the kitchen. We couldn’t wait to create our own tacos from roasted veggies and spiced beans, topped with avocado, fresh squeezed lime and cashew mayo. Unbeatable! So good with chilled watermelon cubes for dessert!
