Climate activists are telling us to “LISTEN TO THE SCIENCE!”

We have been listening and this is what we hear: “URGENT!!!—REDUCE YOUR CARBON FOOTPRINT NOW!!!” We understand that the quickest and most effective way to do this is by shifting our diets away from resource-reliant animal foods like meat and dairy to more efficient plant-based foods like vegetables, beans, whole grains and fruit.

Plant-based eating can be easy, delicious, inexpensive and completely satisfying with a little guidance from trusted resources like the following:

We’ve even found real gems by searching the internet for VEGAN versions of former meaty favorites.

I’ve included a variety of PILAF recipes that will satisfy the hungriest omnivore. We love the nutty, the fruity, the veg. Spice it to taste, add a salad and enjoy!
