Are you looking for a quick and easy pumpkin treat? We recommend Chef Del Sroufe’s delicious pumpkin bread pudding from his Forks Over Knives cookbook. We topped ours with a dollop of Whipped Aqua Fava (unsalted broth drained from a can of chick peas whipped with 1/2 teaspoon cream of tartar and sugar to taste).
Now about Sroufe’s incomparable cookbook—I consider it a classic! It was my first Plant-Based cookbook, much loved and often used to this day. I received it as a gift in 2012 from its publisher Matthew Lore whose mother lives in Rehoboth Beach just down the coastal highway from my home in Lewes, Delaware. She and I had talked on the phone about the extraordinary benefits of Plant-Based eating and her New York City son’s latest publication—Forks Over Knives, the cookbook.
