I was delighted to read your recent article on Dorothy Greet and the merits of plant-based eating, as well as Sue Barry's Feb. 19 letter of support.
I too am a passionate proponent of plant-based eating. As a vegetarian for 24 years and now vegan for a year-and-a-half, I can attest to the many health benefits, including high levels of vitality, energy and well-being. Even cutting back on meat helps - and certainly helps the animals and the environment too.
What's surprising to many though, is how good the food is! People are happy to discover just how delicious plant-based eating can be. Websites abound with fabulous recipes, and restaurants increasingly are offering vegan options as demand for this is soaring nationwide.
