Yes, BOP came to my front door this morning. Big brother presented a gorgeous bunch of fresh picked organic greens from their backyard garden.  Little brother showed off his bow sans arrow.  Both grinned from ear to ear when I thanked them and invited them in to say “hello” to David. But David was nowhere to be found. So little brother asked a most reasonable question,”Is David a dog or a human?”  Later my husband David, a human, and I had a good chuckle over our luscious BOP SALAD lunch.  What a treat! And there’s much more to come they promised.

Recipe for BOP SALAD

Line a bowl with fresh greens

Add your favorite chopped veggies (onions, celery, carrots, beets, radishes, more chopped greens, etc.)

Add something sweet (chopped cooked sweet potato, chopped apple, raisins, etc.)

Add your favorite cooked beans (black beans, kidney beans, chick peas, green beans, etc.)

Add whole grains or serve with whole grain bread

Dress with favorite oil-free dressing (we like a mixture of equal parts Balsamic vinegar and salsa with a little brown mustard)
