BOP CORN AND VEGGETTI

We take seriously the recommendation to eat FRESH and LOCAL!  Lucky for us BOP (Brothers Organic Produce http://capegazette.villagesoup.com/p/shop-at-bop/1265775) is located just around the corner from our front door.  Yes, in the heart of historic Lewes at the foot of Mulberry St. grows an amazing garden with mouthwatering corn, tomatoes, cukes, peas, beets and much more.

So, what’s for supper?  Let’s have some fresh BOP corn and Beet Veggetti noodles made with a handy little gadget from the Kitchen Store--so delicious with a spritz of lemon juice and a sprinkle of toasted sunflower seeds. Add a fresh bean salad and baked sweet potato medallions to make a super summer supper.

Why no meat, no dairy, no oil and no refined foods?  Because we have learned that a plant-based diet with no added oil or refined foods is best for optimum health and weight and best for animals and the environment. Besides it’s easy, delicious, nutritious and less expensive than our former way of eating.
