The Brick Restaurant in good hands

The Brick Hotel Restaurant held a farewell cocktail reception July 31 for Lynn and Ed Lester. Customers and friends welcomed new owners to The Circle in Georgetown.

Taking over are co-owners Chef Bill Clifton and Miguel Batiz, who will manage the front of the house. The restaurant changes hands Aug. 1.

After opening restaurants such as Henlopen City Oyster House and Blue Hen for other owners, Clifton has been looking for an opportunity to do his own thing. He is joined by Batiz in the venture to update and reinvent the historic Brick Hotel Restaurant.

Clifton is known for using ingredients from farmers markets to create a menu that is classically fresh. For two weeks, only dinner service will be offered while the team works to perfect a new menu so a seamless presentation can be offered.

Clifton and Batiz will work with current staff to reinvent the restaurant. Lynn Lester will still hold the reins of the hotel.
