Indian cuisine adds flair to plant-based meal

Osher and Indigo team up to offer plant-based, oil-free meal

Indigo Restaurant in Rehoboth Beach and Osher Lifelong Learning Institute offered a plant-based, oil-free meal Feb. 28, attended by more than 50 people. Participants enjoyed lentil crackers, whole grain tandoori roti bread, savory chickpeas in chana masala, puréed spinach palaak, brown basmati rice, aloo gobhi, cauliflower and potatoes, spicy black lentil daal tarka and coconut cream tofu korma followed by a dessert of carrot pistachio pudding and spiced tea.

Dorothy Greet and Lynn Davis planned the event after having enjoyed vegan meals at Indigo. For anyone who visits the restaurant, chef Raghu Kumar offered to make any dish on the menu oil-free and vegan friendly.

Indigo is at 44 Rehoboth Ave. in Rehoboth Beach. Osher Lifelong Learning Institute has campuses in Lewes and Ocean View.
