Another Birthday, Another Pie

Happy birthday to my amazing plant-based husband, David—93 and going as strong as ever! He’s a chocolate lover and a pie lover; so when I discovered a chocolate pie in Kim Campbell’s new cookbook PLANTPURE COMFORT FOOD, I had to make it for him. This is no ordinary pie! Kim calls it Sweet Potato Chocolate Pudding Pie and David says it’s the best yet! Made with 4 cups mashed sweet potatoes,1 cup dates, and a little chocolate—it’s a plant-based marvel!
