Irish Soda Bread

Quick, Easy, Delicious, Vegan, Oil Free

Adjusted Recipe from Main Street Vegan 

4 cups Whole Wheat Flour

1 Tbls. baking powder

1 tsp. baking soda

1 tsp. salt

2 cups vegan buttermilk*

1 1/2 cups, diced apples

1/2 cups raisins, currants, dried cranberries, or dried cherries

2-3 Tbls. orange zest 

 

1. Preheat over to 375 F.

2. Gently mix flour, baking powder, baking soda, and salt.

3. Add buttermilk, stirring until mixed. Add remaining ingredients 

4. Transfer dough onto a large nonstick cookie sheet, forming dough into a rounded mound. Sprinkle with uncooked oats for garnish and "crustiness."

5. Bake 30 minutes until top is browned and a fork inserted into the loaf comes out clean.

 

Notes:

*To make, put 2 Tbls. lemon juice in a 2-cup liquid measuring cup. Add any unsweetened nondairy milk until the 2-cup line is reached. Allow to rest for a few minutes until curdling occurs
