A meditative walk around the neighborhood pond, a bowl of Plant-Based Colcannon Irish Potatoes with Cabbage, social distancing but not isolation, an exercise session while watching a favorite film, a good night’s sleep—that’s how this elderly couple in the “high risk” category is facing the coronavirus. We are focused on doing everything possible to boost immunity and stay well while sharing what we have learned with others.

According to multiple evidence-based sources*, a low-fat diet of abundant vegetables, fruit, whole grains and beans boosts immunity while a diet that includes meat, dairy, cheese, poultry, fish and eggs suppresses immunity. At our house we avoid all animal products and look to fat-free fresh, frozen, canned and dried Plant-Based foods to fill our plates.
