I’m always on the lookout for a cool, refreshing, nourishing dish when summer heat waves roll in. Thanks to The New York Times Cooking for this quick and easy delicious plant-based gem to see us through our current highs. Mine was perfect even with 2 cups of H2O replacing the veg broth. And I no longer drizzle oil on anything to avoid its high calories and inflammatory characteristics. Keep cool and enjoy!
