What a classy breakfast buffet! Kudos to OLLI (Osher Institute of Lifelong Learning in Lewes, Delaware) and Kings Creek Country Club in Rehoboth Beach for a PLANT-BASED spread that rivaled any I've enjoyed across the country from McDougall Hawaiian Adventures to Esselstyn Plant Stock in upstate New York!

And how do we rate this abundance of Plant-Based goodness? The truth is the planners and Chef demonstrated SENSITIVITY to the need for menu options, AWARENESS of the possibilities and CREATIVITY! The invitation to this annual event celebrating volunteer OLLI instructors asked us to choose either the Plant-Based or Traditional Menu. Of the 90 attending, 20 chose the Plant-Based menu and were treated to a splendid array of meat-free, dairy-free and oil-free choices. The 2 buffets were set up at opposite ends of an elegant dining area with family-style round tables. Plant-Based diners feasted on hot Quinoa and Steel Cut Oat Porridge with multiple fruit, nut and veggie toppings, followed by scrumptious Potato Vegetable Hash and savory Bean and Vegetable Stir Fry.
