Grotto Pizza seasonal menu filled with summer delights

Citrusy cocktails, refreshing salads highlight new offerings

Grotto Pizza’s seasonal food and cocktail menu features refreshing summer flavors and trending foodie favorites.

Take, for instance, zesty Korean barbecue, which is all the rage. Grotto serves it on a flatbread for a tasty finger food. Since some like it cool, the new menu also features an iceberg wedge topped with delicious homemade chicken salad or caprese, a salad with vine-ripened tomatoes.

“Our chefs and mixologists have come up with some delicious ways to take the heat off,” said Jeff Gosnear, vice president of Grotto Pizza. “Chicken salad is a Delmarva favorite, and caprese salad is an Italian import that’s become a summer staple on American menus.”

The seasonal specials give guests options, and the chefs enjoy creating new dishes, he said. However, many tables still share the famous pizza with the signature swirl.

The limited-time menu includes the following: 

Chicken salad on crisp lettuce or a chicken salad sandwich. A mound of tender chicken salad sits atop an iceberg wedge with roasted red peppers, crispy pepper ham, tomatoes, red onions and cheddar cheese with ranch dressing. Or opt for the chicken salad sandwich with lettuce and tomato on a brioche bun. The sandwich comes with either beach fries or fresh vegetables.

Caprese salad. This light, bright salad is made with tomatoes and mozzarella marinated in basil olive oil and balsamic vinegar dressing. It’s served on a bed of arugula with kalamata olives, fresh basil and shredded pecorino cheese.

Korean chicken BBQ flatbread. Spicy Korean barbecue sauce adds a kick to tender, marinated, pulled chicken breast, diced red onion, vine-ripened tomatoes and cheese. Crunchy diced cucumbers are the perfect summer topping.

Onion straws. The ideal starter is made with thinly sliced onion straws battered and fried to a golden brown.

Crispy battered Brussels sprouts finished with a balsamic glaze and shredded parmesan.

Stateside springwater. This lively cocktail is a blend of Stateside Urbancraft Vodka, hand-squeezed lemon and lime, club soda, and a splash of Sprite.

Surfside. Made with Stateside Vodka and natural flavors, this cocktail is sunshine in a can.

Bacardi mojito. Fresh mint, lime, club soda and simple syrup turn Bacardi Rum into the perfect summertime drink.

Patrón Fresh Margarita. The perpetual favorite is made with Patrón Silver Tequila, fresh squeezed lime and triple sec.

Orange or grapefruit crushes. The pride of the Delaware beaches contains Steel Blu, Sprite and triple sec. Neither too sweet nor too tart, this cocktail is just right.
