The color under the soil

History says the plant was originally cultivated for the leaves and seeds, now we eat the taproot. It takes a long time to get a crop of carrots, 90-120 days! They are not a simple crop. They like soft soil, no rocks!

You plant, water, thin and wait, and wait. They contain, of course, lots of beta carotene - for good eyesight my grandma used to say, she cooked them with brown sugar!!   

• Heat 1 inch water to boiling in 3-quart saucepan.

•  While carrots are cooking, heat brown sugar, butter, orange peel and 1/2 teaspoon salt in a inch skillet over medium heat, stirring constantly, until sugar is dissolved and mixture is bubbling.

Yum yum.

I personally think carrots don’t need a thing to be sweet. Especially ones that survive really cold temps, makes them sweet. Carrots, onion and celery together are called mirepoix and it’s used daily in kitchens to make broth.
