Sweet ‘n Sour

Here’s a quick and easy veggie stir fry that meets all our E-MEAL guidelines—Easy(minimal dicing or slicing), Excellent(delicious and nutritious), Economical(inexpensive ingredients), Ethical(no animal products, no abuse), Earth friendly(minimal carbon footprint).

The recipe on a box of instant brown rice inspired us to see what we could do to make an E-MEAL suitable for our class. We didn’t shy away from this convenient packaged food because it’s whole grain rice only, and minimally processed— ready to eat in 10 minutes instead of the usual 40 minutes required for standard rice and readily available as a store brand from any grocer.

We’ve included a photo of the basic box recipe below. To make this a PLANT-BASED E-MEAL we made ONE important change—no animal was harmed in the preparation of our meal. Instead, our own health was enhanced by replacing chicken with mushrooms and including 2 or more cups of fresh (or frozen) greens. We also added a little minced garlic, ginger and jalapeño for kick and used our own easy Sweet and Sour Sauce: 1/3 cup water, 1/3 cup fruit juice, 2 tablespoons soy sauce, 1 tablespoon rice vinegar, 2 tablespoons cornstarch. Mix, simmer and whisk until thickened.
