Veggie Heaven

I’m in Veggie Heaven this time of year with the great abundance of vegetables. Cherry tomatoes are literally dripping off the vines in our tiny backyard garden. The farmers market is overflowing with zucchini, peppers and eggplant. A few onions and some garlic from the produce department of the grocery store will complete the ingredients for a ratatouille to die for.

You don’t even need a recipe for this satisfying stew. Just gather at least one of each of the veggies pictured, chop and sauté all together in a large pot. Add a little water and stir to keep from burning. Now simmer on low until veggie chunks are tender and the juices mingle. Add chopped greens if you have them. I season my ratatouille with a few tablespoons red wine vinegar, a dash of soy sauce, a spritz of sriracha, salt and pepper to taste and a little red wine. Serve with baked or boiled potatoes, rice, pasta or polenta. Now you’ll be in Veggie Heaven, too.
